Amidst a career shift from graphic designer to hawker entrepreneur, Edmund Lye embarked on a flavorful journey, setting up shop beside the renowned Golden Mile Curry Rice. His culinary venture was driven by a deep love for traditional Fuzhou oyster cakes, a delectable snack not commonly found in Singapore.


At Oyster Boy, Edmund offers a concise yet delightful menu, featuring only two variations of this beloved snack: Original and Prawn. The Original oyster cake boasts a tantalizing mix of minced meat, marinated prawns, and delectable marinated oysters, all perfectly seasoned with ingredients like oyster sauce, soy sauce, and pepper. The Prawn version, as the name suggests, skips the oysters but retains all the delightful flavors of the sea with marinated prawns.


Crafting each of these mouthwatering oyster cakes is a meticulous process. Edmund begins by gently spreading a ladle of thin batter, meticulously concocted from three different types of flour. Next comes a layer of perfectly seasoned minced meat, surrounded by three succulent shrimps and two generously-sized oysters. This mouthwatering assembly is then covered with more batter, garnished with a sprinkle of silverbait, and lowered into bubbling hot oil for a satisfying fry.


When it comes to Fuzhou oyster cakes, Oyster Boy stands out as a true gem. Their secret lies in the superbly crispy thin batter that encapsulates the moist and juicy pork filling, masterfully seasoned to perfection. The addition of briny oysters and prawns elevates each bite to a symphony of flavors. These palm-sized puffs, with their crisp outer crust and succulent interior, are an absolute delight.
